SALAMI AND RED PEPPER PASTA

This is such a great motorhome meal; it is fast and easy to make using the minimum of ingredients, leftovers can be served cold as a pasta salad; and it is a great source of carbohydrates which you will no doubt need after a long day in the saddle (or driving).

Must have ingredients:

  • 375g spaghetti pasta
  • 2 teaspoons olive oil
  • 2 red peppers (capsicums), thinly sliced
  • 150g sliced salami, chopped
  • 190g jar rocket or basil pesto

Nice to have ingredients:

  • Rocket leaves, to serve
  • Fresh crusty bread

METHOD

Step 1

Cook pasta in a saucepan of boiling, salted water, following packet directions, until tender. Drain.

Step 2

Meanwhile, heat oil in a large frying pan over medium heat. Add capsicum. Cook, stirring, for 5 minutes or until softened. Add salami. Cook, stirring, for 5 minutes or until just browned.

Step 3

Add pesto to capsicum mixture. Cook, stirring, until heated through. Add pasta and toss to combine. Serve topped with rocket leaves.
