Who does not enjoy the classic pasta dish spaghetti bolognaise? Below is a very basic bolognaise recipe that is so easy to whip up in your motorhome for a hearty and nutritions meal. It is great served with a green salad and a fresh French baguette.

Must have ingredients (Serves 4):

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 garlic clove, crushed
  • 800g beef mince
  • 1 500g bottle of ready-made tomato sauce (aim for a good quality sauce that has added flavours such as garlic, basil, mushrooms or other vegetables. This will help flavour your sauce and thicken it)
  • 400g can chopped tomatoes
  • 1 375g packet of spaghetti

Nice to have ingredients:

  • Fresh or dried herbs: Oregano and thyme
  • Tomato paste (adds richness to the sauce)
  • 1 cup beef stock (adds flavour, but will mean you will have to simmer and reduce your sauce which takes time)
  • ½ cup wine (red if you have it, but white will do also)


Step 1

Heat oil in a large saucepan over medium heat. Cook onion and garlic for 3 to 4 minutes or until onion has softened. Increase heat to medium-high. Add your dried herbs (if you have them). Cook for 1 minute or until fragrant. Add mince. Cook, stirring with a wooden spoon to break up mince, for 8 to 10 minutes or until browned.

Step 2

Add tomato paste (if using) and cook, stirring, for 1 minute. Add wine (if using), can of tomatoes, bottled tomato sauce, and stock (if using). Bring to the boil. Reduce heat to medium-low.

Step 3

You can serve your sauce straight away if you like, however, bolognaise is much tastier if you let it simmer for a little while. So if you can spare the time, cook, partially covered, stirring occasionally, for 30 to 40 minutes or until thick. Season with salt and pepper.

Step 4

Now it is time to cook your pasta. You will no doubt need to use the same large saucepan to cook your pasta that you cooked your sauce in. So transfer your sauce to a large bowl and cover to keep warm. Fill your saucepan up with water and bring to the boil. This process is sped up by placing a lid on your pan.

Place your pasta in the water and cook according to packet instructions – usually between 8-10 mins.

Serve and enjoy.
